These super quick and easy 3-ingredient Peanut Butter Cookies are great for any last-minute treat!

I love having quick and easy recipes at my disposal. That way if I need something in a jiffy due to someone coming over, a forgotten snack, or even just in the mood for a sweet treat I have something quick to make. One of my favorite things about this recipe is that it is very, very simple. I am talking 13 minutes from start to fully finished.
Ingredients
When I say simple 3-ingredient peanut butter cookies I am not joking you only need Peanut Butter, Coconut Sugar, and an egg. Another great thing is you can switch it up based on preference or sensitivities. If you can’t do peanut butter you can switch it with Almond butter, sunflower butter, or whatever other kind of nut butter there is. Also, you can switch out coconut sugar to xylitol or organic cane sugar. You could also put whatever type of egg chicken, duck, or even quail. Just make sure if you use quail you use 3 eggs.
- 1 Cup Peanut Butter
- 1 Cup Coconut Sugar
- 1 Egg

Directions
- Preheat oven to 350 degrees Fahrenheit
- In a Medium bowl mix all ingredients together. 1 cup Peanut Butter, 1 cup coconut sugar, and 1 egg.
- Scoop balls onto cookie sheet (I use a medium cookie scoop)

- Grab a fork and push down on the ball, turn 90 degrees, and push down again.

- Bake for 12 minutes cool and serve.
When I first made these, my husband was very skeptical, but he ended up loving them. They are super simple ingredients, can be tailored to your needs or preferences, and take less than 15 minutes from start to finish. These kinds of recipes are my absolute favorite.
